No. You cannot leave the airport transit zone while waiting for your connecting flight at an Australian airport. The Australia Transit Visa allows you to transit to Australia if you have a connecting flight from an Australian airport to your destination country. The visa is valid for a maximum of 72 hours and is not meant for traveling around or exploring the country. For layovers exceeding 72 hours or candidates willing to explore Australia, you must apply for an Australia Visit Visa or Subclass 600.
